Chill hours explained: what they are and why your fruit tree needs them

What a chill hour actually is
The most widely used model counts one chill hour for every hour the temperature sits between 32°F and 45°F (0–7.2°C). Hours below freezing don't count, and neither do warm spells above 45°F — in fact, a warm winter stretch can partly undo chill you've already banked under some models. This 32–45°F method is the one most university-extension services publish their variety requirements against, which is why we use it too: it keeps the numbers comparable.
So why does a tree need cold to fruit? Deciduous fruit trees evolved in temperate climates where winter is a survival threat. They go dormant in fall and treat accumulated chilling like a clock: only after enough cold has passed are their buds ready to grow when spring warmth arrives. That's what stops them from blooming during a January thaw and losing the whole crop to the next frost.
How many chill hours do fruit trees need?
Chilling requirements vary enormously — not just by species, but variety to variety. Some low-chill peaches and apples fruit with as little as 150–300 hours, while many classic northern apples and sweet cherries want 800–1,200 hours or more.
- Low-chill (100–400 hours): varieties bred for the South and mild coastal California — think low-chill peaches and apples like Anna and Dorsett Golden.
- Moderate (400–700 hours): a lot of widely adapted apples and pears.
- High-chill (700–1,000+ hours): cold-climate apples, sweet cherries, and most northern-bred varieties.
The mismatch cuts both ways. A high-chill apple in a warm climate never gets enough cold and blooms poorly. A low-chill variety in a cold climate finishes its chilling early, then can bloom during a warm spell — only to lose the flowers to a later frost.

Your chill hours come down to your local winter climate, which shifts with latitude, elevation, and how close you are to water — sometimes over just a few miles. The number you can trust is a long-term average for your exact spot, not the figure from one odd winter.

Chill hours vs. hardiness zone
Chill hours and your USDA hardiness zone answer two different questions, and you need both. Hardiness zone tells you whether a tree will survive your winter cold. Chill hours tell you whether it will actually fruit. A variety can be perfectly winter-hardy in your zone and still never crop, simply because your winters are too mild to meet its chilling requirement — a common and frustrating surprise for gardeners in the mild South and coastal West.
